Salmon Patties

onThis a quick and easy dish to make. It can be made the regular way or with gluten free breadcrumbs. It can also be made with any of our seasoning blends. We used French Made Easy in this recipe. The first thing you want to do is open and drain the liquid from you cans of salmon. Empty the the cans into a bowl - use your hands to break up any large chunks.

INGREDIENTS:
2 tsp French Made Easy or Any of Our Blends
3 cans - 6 oz Pink Salmon, drained (boneless and skinless)
2 eggs, beaten
1/2 cup mayo
1/2 cup unseasoned breadcrumbs or panko**
1/2 tsp fresh ground pepper
1/4 cup green onions, chopped
Greek Yogurt Sauce for topping:
7 oz Greek Yogurt (Fage 2% or Whole if possible)
1/2 tsp French Made Easy
Olive oil for cooking
DIRECTIONS:
Mix all ingredients together in medium-sized bowl. Let the mixture rest for 10 minutes so the breadcrumbs can absorb the liquid.
Take about 1/3 of a cup worth of the mixture and shape it into a patty. You can make them thin or thick - to your preference.
Heat 3 Tbsp of olive oil in a saute pan over medium heat. Lightly fry the patties until golden brown - 2-3 minutes on each sides, turning only once.
Mix 1/2 tsp French Made Easy with 7 oz Fage Greet Yogurt (or your preferred Greek yogurt). Chill and spoon over the top of each patty.
Serve with a tossed salad and a green vegetable. Enjoy!
*This
dish is fantastic with French Made Easy, but you can also use any of our blends for a different version - all you do is change the blend you
use - everything else stays the exact same!
**Make this gluten free by using GF breadcrumbs or Panko , or Chickpea Crumbs
***You can make this without the eggs if you prefer
