Grilled Summer Squash with Bell Peppers and Onions

Summer time means fresh vegetables. We love to garden, but are horrible at it so we buy all the organic produce we can from local farmer's markets! This recipe is easy and can be made with any combination of vegetable you'd like to cook, as well as any of our seasoning blends. Red onions are always great when grilled, so are zucchini, asparagus, artichokes, green onions, any kind of pepper, egg plant - you name it! Grilling veggies are one of the best ways to cook them no matter what kind they are!

INGREDIENTS:

1-2 Tbsp Smokin' Chipotle ** (or any of our seasoning blends)
3-4 organic summer squash, sliced in 1/4's
3 organic bell peppers, halved and seeded
2 large onions, peeled and sliced in 1/2" thick slices
4-6 tablespoons of olive oil
1 lemon, juiced

DIRECTIONS:

Wash your squash to make sure it's clean. Cut the squash in half, then cut each half in half so it is cut into quarters. Place on a plate and drizzle with some olive oil, then sprinkle on the Smokin' Chipotle seasoning.

Cut your bell peppers in half then remove the seeds. Next, you need to cut the top and bottom off your onion, then peel the outer skin off. Take your knife and cut the onion into 1/2 slices on the round. You want to keep the onion together when grilling so cutting it nice and thick helps. Drizzle the peppers and onions with some olive oil then sprinkle on more of the Smokin' Chipotle.

Make sure your grill is nice and hot and that the grill itself is really hot. Place all your veggies on the grill and cook for 7 minutes or so per side - depending on how hot the coals are or how high the gas is turned up . Keep and eye on them. Slightly charred adds flavor - burned not so much! Remove the veggies from the grill and chop them immediately. Place in a large bowl, drizzle a bit more of the olive oil over them, squeeze some fresh lemon juice then taste. If you want to add a bit more Smokin' Chipotle seasoning, now is the time to add a pinch or two more.

Serve immediately or chill completely to serve as a cold side dish! Enjoy.
